Spinach and Feta Mini Calzones!

Hi folks! This weeks recipe is a super simple delicious appetizer! These are perfect for get togethers or even as an afternoon treat! Enjoy!

Spinach and Feta Mini Calzones
1 can of Pilsbury crescent rolls
1 small red onion, chopped
1(10oz) package of chopped frozen spinach, thawed and squeezed dry
1 tbsp of olive oil
½ cup of crumbled feta cheese
¼ tsp of ground black pepper
Garlic Salt to taste
-Preheat oven to 375. Heat oil in skillet. Add onion and cook until tender. Add spinach and cook 3 minutes. Stir in feta cheese and pepper, let cool. Roll out crescent dough and divide in to triangles. Spoon mixture in to center of triangles and seal them in to little calzones. Bake for 15 minutes.

Great Summer Slaw!

Hello! This week we thought it would be nice to post a great summer slaw! This recipe is easy and perfect for picnics or Bar B Que's! Enjoy!

Sweet and Sour Slaw
1 bag of shredded cole slaw
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1/2 cup chopped cherry tomatoes
1/2 tsp of celery seed
1/2 tsp mustard seed
1 tsp salt
1/2 cup of white sugar
1/2 cup of cider vinegar
1/4 cup of cold water
- In a large bowl combine cole slaw, celery, green pepper and tomatoes. Toss lightly and chill until served. In a jar with a lid, combine celery and mustard seed, salt, sugar, vinegar and water. Cover tightly and shake vigorously until sugar is dissolved. Chill dressing for several hours or overnight.
P.S. Sometimes I like to crunch up Ramen Noodles, toast them in butter  and sprinkle over the slaw!! Mmmm!

Dessert Treat of the Week!

Friends! This week's treat is a yummy and easy dessert! This recipe adds a little twist to the always good Rice Krispie Treat. Try it and let us know!

Peanut Butter White Chocolate Rice Krispie Treats
3 cups of Rice Krispies
4 tbsp butter
30 large marshmallows
1/4 cup peanut butter
1 cup of white chocolate chips
1 cup of milk chocolate chips, melted
-In a large bowl combine the butter, peanut butter and marshmallows. Microwave for about 3 minutes, stirring every minute or so until smooth and creamy. Add the rice krispies and start mixing, then add the white chocolate chips. When mixed well press in to a 9x9 inch pan that has been sprayed with non-stick spray. Drizzle the melted milk chocolate over top. Let chocolate cool and set in fridge before cutting squares.

It's Been A Long Time!

Hey Friends!
So sorry we took such a long break between posts. We are going to start something new that will hopefully help us keep this blog updated more frequently! We will post one recipe a week!! It can be a recipe for anything.....a SuRpRiSe each week! This will help keep blog readers and us more interested...we hope! So here we go!

Baked Chicken-Bacon Alfredo
8 oz. penne or bowtie pasta
1 16-oz. jar Alfredo Sauce
2 chicken breasts, grilled and chopped (about 2 c. chopped chicken)
6 oz. (1/2 package) cooked bacon, chopped
1 14-oz. jar marinated artichoke hearts, drained and chopped
1/2 c. chopped green onions (about 1 decent-sized bunch)
1 c. shredded mozzarella cheese, divided
Salt and pepper, to taste
-Preheat oven to 350. Prepare pasta according to package directions. While pasta is cooking, prepare heat Alfredo sauce. When pasta is done, drain and add to the sauce. Toss with chopped chicken, bacon, artichoke hearts, green onions, and 1/2 c. mozzarella. Season to taste. Transfer mixture to an 8x8" baking dish and sprinkle with remaining 1/2 c. mozzarella cheese. Cover with aluminum foil and bake at 350 for 20 minutes or until heated through and cheese is bubbly.

Meatloaf Please!

This recipe was sent in by Liddell Cothran! Enjoy this classic meatloaf recipe!

Liddell's Meatloaf
1 lb. ground beef
salt and pepper to taste
1/2 lb. pork sausage
1/3 cup ketchup
2 cups dry bread crumbs
2 t. prepared mustard
1 egg
2 Tbs. brown sugar
1 small onion, chopped
1/3 cup milk
-Combine beef and sausage with bread crumbs, egg, onion, milk, salt and pepper. Mix well. I use my hands. Pack mixture into a 5 x 9 loaf pan. In a small bowl, combine ketchup, mustard and brown sugar. Spread over top. Bake @ 350 for 1 hour or so. I like to double my topping and put more on the last 20 minutes of cooking.

Mushroom & Cheese Grit Canapes!

Enjoy today's appetizer recipe for mushroom and cheese grit bites! Sure to WoW you!

Mushroom & Cheese Grit Canapes
¾ cup mayo
¾ cup parmesan cheese(freshly grated)
1 jar of sliced mushrooms(chopped)
¾ can of French fried onions rings
½ cup shredded cheddar cheese
8 packets(or more) of the cheese instant grits
-make grits according to package, stir in shredded cheese. Put grits in to Pyrex dish and refrigerate until grits are set. Flip grits out of dish on to cutting board and cut in to small circles with cookie cutter-bake grit circles at 350 for 8 minutes. Mix mushrooms, mayo, parmesan cheese and fried onions together-spoon on top of grit circles and bake until golden brown.

Baked Parmesan Dip!

Today's dip is served warm on sliced baguettes! Yum!

Baked Parmesan Dip
3 oz of cream cheese
1 package of frozen, chopped spinach-thawed and drained
1 cup of mayo
1 whole onion, minced
1 whole garlic clove, minced
1 cup plus 2 tbsp of grated parmesan cheese
1/8 tsp of black pepper
½ tsp of paprika
1 whole Artisan Baguette, cut into slices
-Preheat oven to 350. Mix all ingredients together with a hand mixer, reserving the paprika and extra 2 tablespoons of Parmesan for the top. Place into an ovenproof dish and add the extra Parmesan and sprinkle paprika over the top. Bake at 350 degrees till hot and bubbly, approximately 25 to 30 minutes. Serve hot to spread on baguette slices.

Eggnog Spice Bundt Cake!

Here's to kicking off the Holidays with a yummy dessert! Enjoy!

Eggnog Spice Bundt Cake
1 box of spice cake mix
1 box of instant vanilla or cheesecake pudding mix
1 cup nonfat vanilla yogurt
¼ cup of canola oil
1 cup light eggnog
1 whole egg
3 whole egg whites
1 1/3 cup of toasted, chopped pecans(optional)
Powdered sugar
- Preheat oven to 350 degrees F. Coat a nonstick bundt pan with cooking spray. Combine cake mix, pudding mix, yogurt, oil, eggnog, egg, and egg whites in a large bowl. Mix until creamy. Stir in pecans(optional). Pour into prepared pan. Bake at 40 to 45 minutes, until a wooden pick inserted in the center comes out clean. Cool on a wire rack. When cool, dust with powdered sugar.
